Today is NATIONAL CHOCOLATE CUPCAKE DAY and we’re all sneaking away and stuffing our faces whether it be in the supply closet at work or in our cars during lunch. But, we’re here to tell you it is OK TO LOVE CHOCOLATE CUPCAKES. So don’t hide it – grab your family, friends, and co-workers and celebrate this extraordinarily delicious day!
If you have time – try out this amazing recipe for One-Bowl Chocolate Cupcakes. Yes! You only need one bowl!
3/4 Cup Unsweetened Cocoa Powder
1 1/2 Cups Sugar
3/4 Teaspoons Baking Powder
2 Large Eggs
3/4 Cup Buttermilk
1 Teaspoon Pure Vanilla Extract
1 1/2 Cups All-Purpose Flour
1 1/2 Teaspoons Baking Soda
3/4 Teaspoon Salt
3/4 Cup Warm Water
3 Tablespoons safflower oil
- Preheat oven to 350 degrees. Line standard muffin tins with paper liners. Sift cocoa powder, flour, sugar, baking soda, baking powder, and salt into a large bowl. Add eggs, warm water, buttermilk, oil, and vanilla. Mix until smooth.
- Divide the batter among muffin cups, filling each 2/3 full. Bake until tops spring back when touched – about 20 minutes. Transfer cupcakes to wire racks and let cool.
- Add your favorite frosting!
